To erase your MacBook Air, follow these steps, depending on what kind of processor your Mac has:

How to erase a Mac with Apple silicon - Apple Support (CA)


Also, if you're selling or giving away your Mac, make sure to sign out of iCloud first in System Preferences -> Apple ID.
