how using facetime without wifi and only use cellular data

FaceTime will use the available networks, and an iPhone will prefer using Wi-Fi when enabled and available.

If you want to use only cellular and not Wi-Fi, you will want to temporarily disable Wi-Fi while using FaceTime.
