Open the Wallet app ➔ TOUCH and DRAG the Apple Card to the bottom: This will make the Apple Card as the default card for Apple Pay.
The other way of accomplishing this is to open Settings ➔ Wallet & Apple Pay ➔ Default Card: Here put a check mark next to the Apple Card. This will make the Apple Card the default card for Apple Pay.
