how long will my Iphone11 store data for the new version 7 from version 6?

there is about a month between when I have my #6 and #7 Apple Watch. Will the data from the #6 still be on the Iphone to transfer? for how long?

Transferring to new iPhone I cannot find my iPhone XS backup in my iCloud. I want to be sure the phone IS backed up so I can transfer everything on phone to a new iPhone. Logging on to iCloud I only see info from my Mac - but supposedly my watch & iPad as well as the phone are being backed up to the cloud. I can't find any backup for these devices, although they are listed as devices under the settings. How can I be assured everything on phone gets to new phone?

When you change watches and unpair the old one a backup is made and when you setup your new watch this backup is restored to your new watch,there is no time limit.
