Last paragraph indicates you can manage Hide My Email via iPhone, iPad or iCloud.com but doing it via a Mac is not listed. So you must need to login to iCloud.com to accomplish making changes to Hide My Email.
If you login to iCloud.com and go to Account Settings there's a Hide My Email section and a manage link. Here's where you can make the changes you wish to make.
