Apple Pencil Skipping in Notability

Very frustrating problem, as I am using this expensive device during an intensive program of study and need to be able to focus in lecture while taking notes without the constant need to fix this frustrating bug.

It's the same thing that's been asked a billion times on this forum, but I'm ONLY noticing it with notability on a 12.9" iPad Pro (purchased early 2021) and the newer model of Apple pencil. The bug occurs when the device is not plugged in and after I have changed the tip of the pencil, unpaired it, repaired it, charged it, etc. I've reset the iPad, I've deleted and reinstalled the app. I don't know what else to do, but this is so incredibly frustrating and I would love a definitive answer for why i keep dealing with this issue on a pretty new device.
