I would like to get the new apple watch 7 from a US apple store, and I wanted to know whether they did the same thing when the iPhone 13 got released where you need to pick a date before going to the shop, or how exactly?

The same thing happened with iPhone 13, preorder started on the 17th I guess and because I couldn’t preorder it back then, I got a 5 weeks estimated delivery date, so I bought it from store on the 24th after choosing the in store pickup instead of delivery.
That would only work if you can find one which is available in-store. There are virtually no options available in-store right now.
I see, thank you for your reply, I bought the 13 pro max on the release date from an apple store after picking a date to pick it up, I thought it can be done the same way with the new apple watch, especially that it got released today!
Are you in the US or somewhere else? Right now, no one is picking dates to pick up a phone or watch in store. Everyone who wants a phone or watch is ordering one to be delivered to them. And deliveries are now well into November and some cases December.
You can't order from the US Store if you are not in the US, and have a valid address in the US.
Pre-orders for Apple Watch opened a week ago. At this point, it's order one for delivery to your home address. I ordered two Stainless 7 Series watches and I'm not going to see them till around November 24th.

They're so back ordered that I doubt it. You can try going into a store, but you'll likely come out empty handed.
