The truth I had been to apple center and they also don't know what to do back then..
Screen Time is basically parental controls for iPhone. Your parent/guardian can use it to virtually control every aspect of the iPhone. (My parent/guardian once got rid of the calculator😂)
This includes what content you can view, what apps you can use, and even set a time limit for the iPhone.
