Removing Python from Big Sur is not "kinda hard". It is virtually impossible.
Python is included only for Apple's use. If you want to use Python to write your own scripts, I recommend downloading and installing the Python 3.10 from https://www.python.org/downloads/macos/
Apple provides no downloadable installer for the bundled Python 2.7.16. The operating system must be reinstalled to your Macintosh HD. Although this is not supposed to touch your home directory, it is a good idea to have a last Time Machine backup done, before starting that reinstallation.
If on an Intel Mac, boot while holding the cmd and R keys until you see the progress bar, then select Reinstall macOS Big Sur. If an M1 Mac, follow the instructions on the Use macOS Recovery on a Mac with Apple Silicon.
Did you possibly remove Python from your PATH?
It’s kinda hard to actually remove a hunk of macOS, these days.
Try invoking Python from another newly-created Mac login, as a test.
