I skipped over the 14. To the 15. How do I go back and retrieve the previous updates?

All security updates are cumulative - and are included in subsequent system software updates.

If you have updated to iPadOS15, you’ll not able to restore iPadOS14.x; iPadOS 15.0.2 is the current version.
