Depends.

If you are sharing an iCloud plan for storage and your files exceed 5GB, then if you don't activate a new iCloud plan on your own before getting removed from the Family Sharing group, any files that exceed the 5GB free storage option may get deleted from iCloud.

If you are not exceeding 5GB, then nothing will happen.

Make sure you start your own iCloud storage plan if you are using more than 5GB of storage before leaving the Family Sharing group.
