i am looking to buy the Apple SE for my
son with GPS and cellular but need to
check weather it will work with iPhone on sky sim ?

Sky do not support the cellular watch so you have 2 choices;
Buy a GPS only watch and that will work fine.
Buy a cellular watch and use it on Sky as a GPS only watch until either they start supporting the watch or you change network carriers.
In the UK only EE,Vodaphone and O2 support the cellular watch.
