I want to clean install macOS Monterey without touching Windows Bootcamp I have on my mac.

Which of these drives do I have to erase and still have the Bootcamp?

You would need to erase Macintosh HD because that is the partition of the drive that runs macOS.

It is a bit tricky, but you can upgrade to Monterey in place. I highly recommend good backups of both OSes first.
