I suspect it is due to keyboard settings. Look in Settings > General > Keyboards and see if Enable Dictation is enabled. If it is, this is likely the cause. Now, if it isn't go into Settings > Duolingo and see if a setting therein is checked that might be the cause.
Additionally, there maybe a microphone to text feature enabled in Duolingo, as per this Duolingo forums suggestion:
A separate forum entry suggest much that I have noted before:
Go into Settings > General > Keyboard and disable Enable Dictation; then in Duolingo, check for a way in the settings for it to uncheck the language you're learning.

"I solved the problem on my iPhone 12 running iOS 15. Hope it will help. Step: 1. Settings 2. General 3. Keyboard 4. Enable dictation (Turn on Enable Dictation - Green color) 5. Dictation languages => check v (tick v) the languages you are learning). 6. Reopen Duolingo Hope it will help."

In the end after talking to Apple they solved the issue by connecting to my iPad and noticing that the mic top right corner was on so turning that off was the solution. Of course it took 1.5 hours on the chat and phone to fix the problem.
