If you are trying to AirPlay from an iPhone to your Apple TV and your iPhone is asking for a code it should be displaying on the screen of your tv.

Use AirPlay to stream video or mirror the screen of your iPhone, iPad, or iPod touch - Apple Support

”If an AirPlay passcode appears on your TV screen, enter the passcode on your iOS or iPadOS device.”

If you didn’t buy the subscription using the TV App on your iPhone you would need to download the Paramount+ App from the App Store on the Apple TV.
