I am trying to cancel my HULU subscription which is billed through itunes, but am having a very difficult time.
I cannot figure out how to cancel my Hulu subscription via itunes, since I am billed through itunes. Please advise.

See the instructions in How to cancel a subscription from Apple - Apple Support and note the following from that support article:
If you don’t see Cancel, the subscription is already canceled and won't renew.
and
If you cancel a paid subscription, you can keep using the subscription until the next billing date.
