New series 7 watch WON'T pair with iPhone 12 ProMax running 11.6 HELP

Can't update NEW WATCH. Can't update new Watch APP on iPhone. Can't update anything. I'm lost.

In order to pair your new Series 7 you must update your iPhone to IOS 15 or newer.

It will not run on 11.6

Thanks. I auto updated yesterday in the AM: thought I had obtained the latest, but found out I hadn't. After the second update, things worked well. Paired now.
