Restore in progress been interrupted

To first answer your direct questions, we would not recommend interrupting a restore but if you're restoring from an iCloud backup, you might see an option to do this under Settings > your name > iCloud > iCloud Backup. As far as what information might be lost in the restore, that would be unknown until you try it and start noticing what's missing.
