Want to save my information on Apple Watch before I pair it w a new phone but my screen broken on my old phone so I can not access the Watch app/info from there

When you unpair an Apple Watch from an iPhone, the Apple Watch data is backed up automatically to that iPhone. You can learn more about that here: Back up your Apple Watch
