I’m wondering if I need to turn on the water lock feature before even showering, much less swimming in a pool. It says it’s rated to 50m but is it necessary to turn in the lock feature prior to showering as well?

An Apple Watch series 7 is waterproof even if you don't have the lock feature on. The Series 7 has a WR50 rating which means that it can be emerged up to 50 meters or 164 feet under water. The water lock feature is just so that the screen doesn't accidentally get toggled while you are actively doing underwater activities and so that you could clear the water out of the speakers after your workout.
