Thanks for that info and for choosing the Apple Support Communities. If we understand correctly, you are unable to use your iPhone and Mac together. The only way to do this with Bluetooth is via Personal Hotspot on your iPhone, so please see these Apple resources if you are having an issue with this feature:
Share your internet connection from iPhone
If Personal Hotspot is not working on your iPhone or iPad (Wi-Fi + Cellular)

I think you misunderstand. I'm having the same problem, the iPhone 11 Pro will not pair with my MacBook Pro. It says my MacBook Pro is unsupported. I'm on Monterey and iOS15.1. I was on iOS 14.something it started having this issue when I upgraded to Monterey so updated to iOS15.1 thinking it would solve the problem but it did not.
