Backing up Iphone to Itunes

Getting new iPhone but it's back ordered for about 3 weeks. Old iPhone will be turned back in to work and I want to save everything or back up all my data, pictures, apps etc. Someone told me I could mirror to iTunes on my laptop but I don't know how to do it.
