It may sound simplistic, but have you attempted to power off and restart? If not, please follow this: Restart your iPhone
Do you see the option after restarting?
Take a moment and check your Accessibility settings. Go to Settings > Accessibility > Display & Text Size. Verify Invert Colors, Grayscale and Increase Contrast. Turn off these options if they are on.
