Upon updating to Monetery, certain Excel docs cannot function and state not enough memory, file size issue. I have tried deleting old items, restarting, and checking for an updated version of Excel. No luck.
How do I resolve this issue?

Update Monterey to 12.0.1, and MS Office to 16.54. After that, if the problem persists, it is Microsoft's problem to fix as it is their product. They may know about it, and a fix may be forthcoming, either in the next macOS update, Microsoft update, or both.
I'm not having that issue with Excel and Monterey but there are at least two discussions of Excel memory issues with Monterey in the Microsoft Excel for Mac forum (I didn’t explore for more or to see if any solutions were posted). Could be, but at this early release of Monterey, it could be like two ships passing in the night, and sometimes, both vendors need to collaborate on a fix. Time will tell.
I have this same question! I have deleted rows from 3500 down to less than 500 and can't save the file due to "NOT ENOUGH MEMORY". Apple shat the bed on this update!!!!!!!! NEED FIX NOW!
