Will my stolen laptop initiate the locked feature if it never goes online?

My laptop got stolen and the dilemma is to lock or erase via Find my device.

I know the pros and cons and am choosing to lock BUT do either feature protect my laptop information if it never goes online by being Linked to WiFi?

MacBook Air (2020 or later)

I read those articles but my laptop is not WiFi ready upon opening up the top. I usually use my personal hotspot to work. So my concern is that the thief will open the laptop, crack the code and have access to hard drive information all while not activating the WiFi enabled Lost or Erase features of Find My. Does that make sense? Is that possible? I do have a password page upon opening.
