I suggest that you use the free app provided by Apple to do so. It can transfer all of your files, or none of them. It can transfer your Apps or not. It can transfer your preferences and settings. You tell it what to transfer, and from where. Just be sure to use a USB wired connection, not Wi-Fi for the transfer.
