Restore back up from over a month ago

Can I restore my iPhone from a really old back up? Like over a month ago?

Yes, if the backup is available. But if you backup every day or if you have backed up more than twice in the last month, that backup is gone. iCloud saves your last two backups so when you backup again, you overwrite the older backup and that process repeats itself with each ensuing backup.
