Follow Up Summary: I never found a fix. I created a new Admin user & "switched" to it.
After spending hours with Apple Support & my companies internal support there is no "fix".
My IT department had me create a new Admin user on my system & start using that instead.
Mine is doing the same thing and it's a personal machine so it's not the profiles.
Summary: System Preferences\Profiles - Uninstall/Re-install all profiles listed to potentially fix upgrade issues.

My company has installed "Profiles" on my corporate owned MacBook Pro 16 2019.
Issue: The Menu Bar icons (Top Right) are not displaying properly after upgrading to Monterey.
My main frustration is that "Clock" (Date/Time) are not showing.
Apple support: After many troubleshooting steps, they believe the issue has to do with the "Profiles" my company has installed.

FWIW, the time shows whether "Show date" is checked or not. At least on all my Macs running Monterey.
Open System Preferences > Dock & Menu Bar > Clock. Make sure "Digital" is selected and not "Analog".

You are right, analog just shows a circle with hands.
Mine is also a personal machine, and resetting the preferences (3 times now) is having no effect.
Have you tried reinstalling the OS?

Somehow after a series of restarts I did recover the missing function. Not sure what it was that unlocked it. Thanks for your response.
