Date Modified is stuck on Jan 1, 2020 at 2:00 a.m.
Many of my applications are reporting the Date Modified as "Jan 1, 2020 at 2:00 a.m." Seems odd. Any thoughts on why this is happening?

Looking at those noted, all are Apple default installed applications and I would not worry about it.
If it really is an issue, run Disk Utility's First Aid to see if there are any issues with your Mac's boot drive and is not, have you either recently reset your NVRAM and SMC? Also, and this is a stretch; but has your computer's date had issues as well? I ask as the motherboard's CMOS battery might be about to die. But on a 3 year old device, I highly doubt that is the cause.

Big Sur uses 2020-0101-0000 PST for most Apple's apps (obviously your Mac is at CST timezone i.e. +2 hours). AFAIR Monterey sets them to August 2021 or something like that.
