I have a problem in updating my Mac to OS Catalina Security Update 2021-007 10.15.7

Where the devise taking longtime and stuck when I start update the system and restart the system for installing the updates

I don't know why? and I hope could answer from you soon

How much free space do you have on your Hard Drive?

Start with this...

Safe Boot, (holding Shift key down at startup), does the problem occur in Safe Mode? Could take 10 minutes.

Safe mode attempts to repair Disks & clears lots of caches & loads safe Drivers, & prevents loading of 3rd party extensions.
