The icon you described sounds like the Voice Control icon. When Voice Control is enabled it will show a blue microphone in the status bar. More information about this feature can be found in the following article.
Use Voice Control on your iPhone, iPad, or iPod touch
If you don’t want to use this feature it can be disabled in Settings > Accessibility > Voice Control, then tap the green toggle next to Voice Control.
