I disabled the focus status sharing, but each contact still shows that I’m sharing my status with them.

Were you also able to check if 'Share Focus Status' is disabled in each affected Messages thread with the contact in question? (Tap their name > Share Focus Status). If that's disabled there as well, then we'd recommend checking directly with Apple Support for further investigation: Get Support

We can understand the concern there. Just to confirm, is it no longer sharing the status with the contacts that you've individually disabled it for?

I have disabled in the focus menu under settings, I’m updated to 15.1, have reset my phone multiple times, and still shows that I’m sharing my focus status with contacts that I don’t want to share with.
It is not disabled there. It has been enabled for all of my contacts, this should be disabled when I selected to not share under the general settings. It is enabled for every contact. I should not have to update every contact individually to correct this.

We see you're looking to turn off the sharing of the Focus Status. We'd be happy to help out there.
Let's try checking in a couple spots for the 'Share Focus Status'. First, head to Settings > Focus, and select the one that you generally use, such as Do Not Disturb, Work, etc. Then choose Focus Status, and see that Share Focus Status is off there.
After that, try launching a Messages thread with one of the contacts it's happening with. Tap on their name at the top, and ensure 'Share Focus Status' is disabled for them here as well.
If the above doesn't help, also ensure you're updated to the latest iOS 15 version, which is currently iOS 15.1: Update your iPhone, iPad, or iPod touch
With odd issues, it may also help to try a quick restart: Restart your iPhone
