eMail from non default address

I have multiple email accounts. When I create a new mail, my iPhone 8 seems to ignore the default mail setting and change the FROM field from the default. If I select the address from my contacts, it seems to work okay, but if I manually write in the same address, it changes to another account, it’s always the same for that recipient address, but is different for different recipients. When I manually change it back to default it then stays on that field until the next time I create a new email. Help!!!!

Hi, thanks for your reply, but sadly it doesn’t solve the problem.

Firstly, my default account is set correctly, as you have shown.

The issue occurs when I’m composing emails from my ‘all inboxes’ area, which I always use. When there, if I compose an email, the To: field, correctly shows my default account. Now when I write in from memory, a contact into the To: field inexplicably it changes to one of my other email accounts. If however, I didn’t write an address in, but selected THE VERY SAME email contact from my contacts list, the To: field doesn’t change, staying on the default account - Aghh!!!
