I downloaded Big Sur on my 2017 MacBook Air (because it wouldn't download any other OS and I don't want Monterey) now I don't like the interface on Safari which is showing up. The lines dividing up all the sections of the page are too thin. How do I get back to the Safari I had with the thicker lines?

It appears that you'd like an older version of Safari on your MacBook Air after upgrading to macOS Big Sur. Safari is updated and installed as part of the macOS. It is not possible to downgrade Safari: Update or reinstall Safari for your computer - Apple Support

What is seen as an "opening page" can be user set to any number of things. Do you mean Safari's built in Start Page? If so, I am not seeing outlining as you describe.
Can you include a screenshot of what you are seeing?
See if you happen to have this option turned on.
If so, turn it off and see if that makes a difference. Early on, mine was doing some weird stuff, with boxes around things, and turning this off fixed it for me.
No I don't have this box checked. Here's what my Advanced Settings in Preferences on Safari is set:

Most interesting. Let's try one more area. Go to System Preferences > Accessibility > Display > Display and see if you have anything turned on there that might be causing your concern.
"The lines dividing up all the sections of the page" - Which page, and which lines?
The opening page and the lines outlining all the boxes and different parts of the page!
This is how my page opens up.
Thank you so much. I had "Increase contrast" checked. I unchecked that box and checked "reduce transperancy" and its now fixed. Again, Thank you
