Can I set up touch ID for apps on iPhone 8 not included on the list in settings?

The only way an app will support Touch ID is if the app developer coded it to do that. Check the settings area of the app in question to see if allows you to use Touch ID. Not all developers do. If you do not find it in the apps settings menu, check with the app developer to see if their app supports Touch ID.
