If you are referring to unlocking the iPhone because you forgot the passcode, you have to restore it to remove the existing, forgotten passcode. That results in everything getting erased. At that point, then you could restore your last backup. If you have not done a backup, that is on you. You need to be running regular backups. The time to backup is not after a problem, it is before.
