And that’s without knowing under what conditions (what you did to get to this point) you expect to see “Delete All”. Deleting messages and/or their specific bubbles is simple.
yes it's "cake". if it works... nada..... listen to my wonderful explanation.. I installed IOS 15.1.1 that's all folks.... and from then on it no longer can delete the entire text conversation.. just like the person who 1st started this conversation said.. it's 1 message at a time now...

Strange. I just deleted several complete conversations. I swiped left on the conversation in the list view and tapped DELETE. I was then asked to confirm, which I did, and the conversation disappeared.

If you tap "Edit" then select the threads you want to delete, "Delete" appears in the lower right corner. Tap it, confirm and the threads are gone.
Using iOS 15.1.1, simply swiping the message header from right to left as usual:
Delete ALL is no longer appearing in the upper left hand corner.. it's blank... after installing IOS 15.1.1

Late breaking news.. I contacted APPLE.. They know it's a BUG.. told me to report it to APPLE.COM/FEEDBACK
I did that.. will just have to wait for a patch.
