I want to buy an adapter from Apple online.. what is better for my iphone 13 pro max 20W adapter or 30W adapter?

This is the one that is normally recommended:
20W USB-C Power Adapter - iPhone Accessories
However, almost any Apple adapter (or one with MFi) will work if the cables fit.
