How do I unsubscribe to Apple Pay? I don’t really use lot. No need for me to pay $1.05 monthly if not using it.

Apple Pay is not a subscription, it is a platform within the Wallet app that allows you to connect eligible credit and debit cards for the purpose of checking out with merchants online, and in-store, using your compatible Apple devices. There is no fee associated to using Apple Pay.
It sounds like you might be referring to an iCloud+ storage plan? If so, this would appear as apple.com/bill on your transaction history.
You can downgrade your storage to the free 5GB, but do keep in mind that any data backed up and stored with iCloud will be lost/erased/removed once the plan is no longer active.
