Apple Watch Keyboard

Does anyone know how to turn off the keyboard option for the Apple Watch 7? Don’t get me wrong, I think the option is amazing. But I’m hoping that’s what it is, an option. I’d prefer to write like the older series.

The mic option is available on the bottom right of the keyboard. For scribble, swipe the keyboard up and select scribble.
