Can I do this without allowing them to view and/or update other data I have stored on ICLOUD?

No, Contacts are private and restricted to your Apple ID/iCloud account.
Can I do this without allowing them to view and/or update other data I have stored on ICLOUD?
Again, it cannot be done.
