I bought an Apple Watch SE for my husband and got it in the mail the other day for $309 but now target has them on sale for $249.99. So I’m either going to return this watch and buy it there or I wondered if you would honor that price

Apple currently has the Christmas return rules in effect, so you have until January 8th to return the Apple Watch for a full refund.
