Transfer of data from iPhone 7 to iPhone 12 mini
Software Updating whilst setting up new iPhone 12 mini. Should this happen? It seems to be taking hours. Should I restart?

Did one of your devices prompt you to update your iOS in order to complete the transfer process? If so, go ahead and let the update complete. Software updates, as well as transferring data from one device to another, can take some time depending on your internet connection and how much data is being transferred.
