Safari Extensions missing
All of my extensions have disappeared from my extension folder in Safari preferences. How do I get them back?

I just had the same issue with Safari 15.2 - my Ghostery ad blocking extension disappeared from the extensions list in preferences.
The solution was to:
1) Close Safari
2) Open a Terminal and execute this command:
/System/Library/Frameworks/CoreServices.framework/Frameworks/LaunchServices.framework/Support/lsregister -kill -r -domain local -domain system -domain user
3) reopen Safari
and Safari then found my missing Ghostery extension and allowed me to re-enable it.

It appears that your installed extensions have disappeared from Safari > Preferences > Extensions. Are you able to go into the App Store app and install those again? As seen in the following article: How to install Safari extensions on your Mac - Apple Support

This worked for me as well. Symptomatic of Apple nowadays that things break silently and you have to go digging deep into OS internals to fix.
