You can do this by adding the Current Pace metric to your workout. Open the Watch app on your iPhone, tap Workout, tap Workout View, tap a workout, e.g. Outdoor Run, tap Edit, remove one of the existing metrics (otherwise you won't be able to add a new one), add Current Pace and tap Done.
