After I have opened my iphone and switched data from android to iphone, when does the Carrier (Verizon) switch over phone.

When you switch the SIM card, or actually request Verizon to activate your service on the new iPhone. It will not happen automatically.

You only have to take the SIM card out of the old phone and use it in your new iPhone, assuming that your old phone had a nano-SIM. If not, contact Verizon to get a SIM card specific to your iPhone.
