Migration Assistant (an option that will automatically appear upon first starting up a new Mac) will automatically segregate any incompatible programs.

That's the way I've been setting up all my Macs since 1987. Programs written for the 68000 series CPU are long gone, as are those for the PowerPC that superseded it, as it will be for the Intel Macs that superseded them.

It's best to use the setup assistant when prompted, but if you don't want to do it then, you can always do it later: Move your content to a new Mac - Apple Support.

But if you do this before you migrate, you won't really have anything to migrate.

Any TimeMachine backup you have, you should have at least one, will restore all your old stuff when migrated over.
