Pages does not have a dark theme other than what it inherits from the currently selected macOS appearance mode. That does not include an automatic black document body. Pages does offer a word processing black blank document template with default white text. That will export to a black Word .docx or PDF with white text.

Pages also supports Page Layout documents where you can set the page background to the color, image, or gradient of your choice.

Pages is not a Word clone and does not attempt to provide Word features.
