How do I get to the very beginning of a text message quickly without having to scroll up thru the entire message?

You don’t Have to scroll at all. To get to the top of the screen, in many apps, simply tap the top of the screen just below the notch. In the Messages app, tap just above the recipient’s name/avatar. This also works for Safari.
