It starts playing some white noise sleep playlist instead of the bespoke Ambient Sound. I have used this every single night for 3 years so it is not a "me" thing, it's a Siri or Apple Music issue.

How odd, works here. And you have an active Apple Music subscription I assume. Reboot router and HomePod and try again. Failing that restore the HomePod and set it up again.
